Ube is everywhere these days, but truly great ube—the kind made with real yam, not extract or purple food coloring—is surprisingly hard to find. When it's done right, the flavor is unmistakable: rich, earthy, a little nutty, faintly floral. The difference between real and fake ube is obvious the moment it hits your tongue.

Every January, Chef Rhea Castro SyCip receives her annual batch of kinampay—the prized heirloom ube variety from Bohol, darker and more aromatic than the standard purple yam—from Bohol farmers and turns it into this: three layers of ube sponge, kinampay jam, ube whipped cream, and fresh berries.
